A very happy Australia Day. Here is lovely little Lamington cake to celebrate today. Lamingtons are a staple on Australia Day. This cake is a gorgeous, light and delicious sponge cake filled with strawberry jam covered with chocolate icing and shredded coconut! Yum!!!!
I created this cake for some dear friends who where having a Christmas function. I knew there where going to be lots of kids there so I not only wanted it to be Christmassy but also FUN! So what could be more fun than a cake full of yummy things to pull off and eat!!!! Candy canes, lollies and homemade gingerbread men where a hit and the cake was too…top tier was a white chocolate mud raspberry cake and bottom was a chocolate mud with salter caramel! YUM on all levels!!! I LOVE CHRISTMAS!!!!!
Yesterday the Autumn 2014 edition of Cake! eMag was published. I eagerly looked through it to see if any of my little creations appeared.. and there was not 1 but 2 and one was a full page!!! Hooray!
